Slow Cooker London Broil

Ingredient List
  • 2-3 lbs London broil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or rosemary (optional)
Instructions
  1. Season the London broil generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, sear the London broil for about 2-3 minutes on each side until nicely browned. This step adds flavor through caramelization.
  3. Transfer the seared meat to the slow cooker.
  4. Add sliced onions and minced garlic on top of the meat.
  5. Pour beef broth and Worcestershire sauce over the meat and vegetables. Sprinkle with thyme or rosemary if using.
  6. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the meat is very tender.
  7. Once cooked, remove the London broil from the slow cooker and let it rest for about 10 minutes. This helps retain juices.
  8. Slice or shred the beef depending on your preference. If you prefer a thicker sauce, you can pour the liquid from the slow cooker into a saucepan, bring to a boil, and reduce until thickened. Or, you can thicken it with a cornstarch slurry.
  9. Serve the beef with the onions and sauce. It pairs wonderfully with mashed potatoes, rice, or your favorite vegetables.

Tip: For an even richer flavor, you can deglaze the skillet used for searing with a bit of red wine or additional beef broth before adding it to the slow cooker. Also, consider adding carrots or mushrooms in the last hour of cooking for extra flavor and nutrition.
