Herb Butter London Broil

Looking for an easy way to make your steak dinner special? This Herb Butter London Broil recipe is just what you need. It uses fresh herbs like thyme, rosemary, and parsley, along with garlic, to create a rich and flavorful butter that you spread over your steak. This simple yet elegant twist elevates a regular steak into something extraordinary. It's perfect for a dinner that feels a bit fancy but is still straightforward to prepare. Whether you're cooking for your family on a weeknight or hosting a small gathering with friends, this dish will impress without demanding too much of your time in the kitchen. Plus, the herb butter can be made ahead, making your meal prep even easier.
Ingredient List
  • 1 London broil steak (about 2 pounds)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon lemon zest (optional for brightness)
Instructions
  1. Preheat your grill or broiler to high heat.
  2. Season the London broil generously on both sides with salt and pepper.
  3. In a small bowl, mix the softened butter with minced garlic, thyme, rosemary, parsley, and lemon zest if using. Blend until well combined. This is your herb butter.
  4. Grill or broil the steak for about 4-5 minutes on each side for medium-rare, or adjust cooking time based on your preferred doneness. Use a meat thermometer to check; aim for an internal temperature of about 135°F (57°C) for medium-rare.
  5. Once cooked, transfer the steak to a cutting board and let it rest for 5 minutes. This allows the juices to redistribute throughout the meat.
  6. Slice the steak thinly against the grain.
  7. Spread slices of the herb butter over the hot steak slices. The warmth of the steak will melt the butter, infusing the meat with flavors.
  8. Serve immediately, allowing the butter to melt over the steak, adding flavor and richness to each bite.

Tip: For an even distribution of flavors, you can prepare the herb butter in advance and let it sit at room temperature to soften before use. Store any unused herb butter in the refrigerator, wrapped in parchment paper or plastic wrap, for up to a week, or freeze it for longer storage.
