Grilled Flank Steak

Ingredient List
  • 1 flank steak (about 1.5 to 2 lbs)
  • 1/3 cup soy sauce
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
Instructions
  1. In a bowl, whisk together soy sauce, olive oil, lemon juice, garlic powder, onion powder, paprika, and black pepper to make the marinade.
  2. Place the flank steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it's well coated. Seal the bag or cover the dish, and let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Preheat your grill to high heat. Remove the steak from the marinade and let any excess drip off; discard the remaining marinade.
  4. Grill the steak for about 5-7 minutes on each side for medium-rare, depending on the thickness of the steak. For medium, cook for an additional 1-2 minutes per side. Use a meat thermometer to check doneness; you're looking for an internal temperature of about 135°F for medium-rare.
  5. Once cooked to your liking, transfer the steak to a cutting board and let it rest for 5 minutes. This helps redistribute the juices throughout the meat.
  6. Slice the steak thinly against the grain. This ensures tenderness, as flank steak can be chewy if cut the wrong way.
  7. Serve hot as the star of your meal, perhaps with grilled vegetables or a fresh salad on the side.

Tip: For an extra flavorful crust, pat the steak dry before grilling and consider adding a sprinkle of coarse salt just before it hits the grill. Remember, the steak continues to cook slightly while resting, so remove it from the grill a bit before your desired doneness.
